Herb Crusted Citrus Pepper Chicken

INGREDIENTS

  • (3) Chicken breasts yield 6 half slices
  • Citrus Pepper, to taste
  • Smoked Cherrywood Sea Salt, to taste
  • Chicken Breasts (skinless, boneless)
  • Lemon, cut into wedges
  • ¼ Stick of butter or EVOO


INSTRUCTIONS

  1. Remove chicken from package and pat dry
  2. Tenderize with a fork, working your way through the entire chicken breast
  3. Season with salt and let the chicken sweat for a few minutes
  4. Season chicken with Citrus Pepper (Remember to layer the seasonings so that the Citrus Pepper gets into the meat and creates a nice coat)
  5. Add ¼ cup EVOO (or butter) to a cast iron skillet
  6. Heat your grill up to about 500*; Add skillet to the grill, add one wood chunk in a flavor of your choice
  7. Add your chicken to the skillet and allow to brown on one side (add the lemon wedges for an extra bit of moisture and flavor)
  8. Flip chicken and brown on the other side (pull when IT is 165*)
